大男人小料理(16) – 炒香菇 October 31, 2007

其實裡頭放了香菇、紅蘿蔔、青江菜…我覺得還滿香的 =v=

材料:
1. 香菇
2. 紅蘿蔔
3. 青江菜
4. 蒜

步驟:
1. 紅蘿蔔切粗絲(條?)
2. 香菇切小片
3. 先灑點鹽,熱一下蒜讓香味出來
4. 下紅蘿蔔和香菇炒
5. (快熟時)加點橄欖油
6. 把洗好的青江菜丟下去
7. 悶一下看菜葉軟了就起鍋吧

也是看電視學的,說香菇要好吃有個撇步,就是買回來後,傘朝下拿去冷凍。這樣可以讓裡面的…什麼嘌呤的破裂分解出「鮮味」@@a
總之…降子亂炒出來也滿好吃的…我真是不挑 o_Oa 不過我還有加一味,就是切條的火腿肉,平衡一下滿盤菜味 XD

冷凍不會讓嘌呤分子破裂,但是會讓香菇細胞脹破然後脫水是真的→脫水的話鮮香味就濃了。
